Coleslaw




I couldn't tell you the last time I ate a creamy coleslaw b/c I have always made this one. My mom started making this years ago so it's all I know. Plus, it's easy light version. Enjoy!



1 package coleslaw mix
chopped green pepper (use red if you're feeling spunky)
chopped green onions

Dressing:
3 TBS sugar (or 5 pkg. Equal)
3 TBS vinegar
3 TBS hot water
1/4 cup oil
salt and pepper to taste


Dissolve sugar in hot water. Add rest of dressing ingredients. Mix slaw ingredients together and pour dressing over it. Combine and serve or let sit in fridge for awhile.

Broccoli Salad



This salad does not last long at our house. You can't go wrong with bacon and sugar! Enjoy.


Salad:
1 bunch broccoli, washed and cut
1/2 cup raisins
10 slices bacon, fried and crumbled (I don't usually use that much)
1/2 cup sunflower seeds
1/4 cup red onion, chopped

Dressing:
1/2 cup mayo
3-4 TBS sugar
1 TBS vinegar

Mix salad ingredients together in a medium size bowl. Combine dressing in seperate bowl and pour over salad. Refrigerate for at least an hour. Toss before serving.

Cheesy Corn


I combined 3 different recipes, mainly b/c I didn't have all ingredients to complete one, and came up with this. We thought it tasted the closest to Jack Stack's that I've ever made and we coudln't stop eating it! Let me know your thoughts!


16 oz. bag frozen corn, thawed
1 block cream cheese
1/2 stick margarine
1/4 cup sugar
1/2 tsp garlic
1/2 cup water
1/4 cup sharp cheddar crumbles (that's just what I had)
salt and pepper to taste


Combine all ingredients and heat to simmer. Simmer on low for at least 20 minutes, the longer the better.

Jack Stack's cheesy corn has smoked meat in it. I did not have any so if you have any ham, you might throw it in and it would probably taste just like it.
